Healthy, fruity recipe for Vegan Coconut and Berry Ice Cream
4 frozen bananas
1 cup frozen berries
1/2 cup chilled coconut milk
In a food processor, blend the banana, berries and coconut milk by pulsing and scraping the sides of the bowl every now and then.
Blend for 5 – 8 minutes until smooth. Serve immediately or transfer to a container and freeze for another 2 hours before serving.
You can make this nice cream way in advance! Simply take it out of the freezer an hour before serving, if the nice cream has been in the freezer overnight.
