This Mushroom Beef and Rocket Salad recipe makes a great lunch
60ml olive oil
350g big brown mushrooms sliced
2 red onions cut into thin wedges
300g beef sirloin steak, trimmed
2 medium ripe tomatoes cut into wedges
1 bunch rocket leaves, washed and drained (or any other green salad leaves of your choice)
salt and ground black pepper, to taste
Combine 30ml olive oil and salt and pepper in a medium bowl. Add mushrooms and onions and toss to coat in oil mixture.
Preheat braai to medium-high heat
Brush both sides of steak with 30ml olive oil and season with salt and pepper. Place steak onto braai and cook for 3-4 minutes (for medium) on each side or until cooked to your liking. Remove to a plate, cover with foil and set aside.
Meanwhile, place mushrooms and onions onto a braai plate on top of grill and cook, tossing frequently, for 2-3 minutes or until tender. Remove to a plate.
Place tomatoes onto same braai plate on the grill and cook for 1 minute on each side or until warmed through
Slice steak, across the grain, into thin slices.
Place steak, mushrooms and onions and tomatoes into a heatproof bowl and toss gently to combine.
