Super simple starter recipe for Bruschetta topped with goats cheese and tomato pesto
4 Tbsp sundried tomato pesto (or any pesto of your choice)
Fresh basil or rocket leaves, to garnish
Lemon juice, to taste
8 slices fresh baguette (not more than 1cm thick)
100g roll of soft goats cheese (chevin)
Salt and freshly ground black pepper, to taste
Fresh basil leaves, to garnish
Toast your baguette slices under the grill in your oven, or in the toaster.
Remove and top each one with a dollop of pesto, followed by a crumbling of goats cheese and then a fresh basil leaf.
Add salt and pepper to taste and serve immediately.
