Recipe for Stuffed Calamari Tapas with chorizo and feta cheese
16 calamari tubes
2 tbls butter
2 cups cooked rice
½ cup parsley, chopped
½ cup pepper feta cheese, crumbled
½ cup chorizo, finely chopped
2 tbls olive oil
Squeeze of lemon
½ cup white wine
1 tsp garlic, crushed
2 cups All Gold Pasta Sauce Sundried Tomato & Olive
1 tsp fresh basil, finely chopped
1 tsp sugar
Salt & pepper
Lemon wedges and flat leave parsley to garnish
Sauce: Add all ingredients to a saucepan and bring to the boil, Allow to simmer for 5 minutes. Adjust seasoning and set aside to serve with the calamari.
Calamari: Mix the stuffing ingredients together and stuff each of the tubes full. Secure the opening with a toothpick.
Heat the butter in a pan and fry calamari tubes for 2 minutes on each side until cooked.
Pour the tomato sauce over the calamari tubes and bring to the boil.
Serve garnished with parsley or extra basil and some fresh lemon wedges.
Chef’s tip: Great served as a starter or as tapas when entertaining. Add some toasted pita triangles or bruschetta and enjoy.
