Spicy Chicken with Fried Rice recipe

Recipe for Chicken and Fried Rice that will put a new twist on these regular ingredients

Ingredients
2 cups of rice
1 tea bag Organic Green Tea

Vegetables:
3 Garlic Cloves
3 small Red Sweet pepper -or 1 Large, sliced
1 cup Corn, fresh or frozen
1 1/2 Cup Peas, frozen or fresh
4 Mushrooms, any kind will work
Poultry or Meat:
1/2 Chicken Breast {or any kind of meat that you desire}

Garnish:
Sesame Seeds
Few drops of Lemon Juice *optional

Condiments:
1 TBS. Vegetable Oil
1/2 tsp. Sesame seed oil {spicy)
Sea Salt and ground Black Pepper to taste
Sprinkle of Crushed Red Pepper
1 Tbs. Soy sauce or to taste

How to
In a pot put 2 cups of rice, already washed a few times under cold water, then add 2 ¼ cups water + 1 teaspoon of sea salt.

Let the water boil, then turn down the heat to low/simmer and cover for the next 5 minutes. For the last few minutes add a green tea {filter bag} and let it simmer; Turn OFF the heat, and set the pot aside, covered. Let it steam for an additional 7 minutes. Do not open up the lid. After 7 minutes of steaming, take the lid off and fluff the rice with the fork.

Heat the Wok {or any frying pan} with vegetable oil and add garlic; stir fry for a few seconds.

Add chicken because chicken takes the longest to cook; season it with bit of salt, pepper, and crushed red pepper.

Once the chicken starts to gets a nice colour, drop the veggies in one kind at a time – the mushrooms should be last because they don’t take much time to cook.

On a high heat the veggies will start to cook pretty fast, so you have to keep them moving; let them stir fry for few minutes on high heat until they are done.

Drop the rice in the wok with the rest of the veggies, stir fry until it is coated with the oil; Stir so it doesn’t burn!

At this point I like to add Soy sauce and sesame seed oil; Stir fry for a minute and set aside until ready to be served. *You can squeeze in a bit of lemon juice, it does give you fantastic flavour!

Sprinkle with toasted sesame seeds.

Notes
You can also add few eggs, scramble them with the rice, chicken and veggies; I tried it and loved it!

Battling to find spicy sesame seed oil? Most of the local grocery stores do have them, just look in the aisles with Asian/International products OR go to an Asian/International market. If you can’t find it, substitute with regular sesame oil and add spices of your choice.
