Sesame & Ginger Beef recipe

Fragrant Beef Mince served with Rice, topped with Sesame Oil, Lime Zest and Bean Sprouts

Ingredients
1 cup parboiled brown rice
4 cups boiling water (for the brown rice)
1 lime ginger – peel & chop finely (see video)
30g ginger – peel & chop finely (see video)
3 tbsp soy sauce
2 cloves garlic – peel, grate finely & chop
1 fresh chilli – slice thinly
2 sachets honey
2 tbsp sesame seeds
500g beef mince
200g green beans – remove ends & cut in half
1 head broccoli
2 tsp sesame oil
40g bean sprouts
olive oil (from your pantry)
salt & black pepper (from your pantry)

How to
Preparation: Prepare all ingredients as indicated above. Boil the kettle.

Brown rice: Place a saucepan on medium heat and pour in the boiling water (see quantity above for the brown rice). Add a little salt, then add the rice and boil gently for 18-20 minutes on medium heat. Drain and keep warm in a colander over a saucepan of hot water.

Lime: Using the fine side of a box grater, grate the skin of the lime to create lime zest. Then cut in half and juice. Set aside.

Broccoli: Cut the broccoli into florets and cut the florets in half. Set aside.

Sauce: In a bowl, mix together the ginger, soy sauce, garlic, chilli (optional), honey, sesame seeds and the lime juice.

Mince: Place a large pan on medium-high heat with a drizzle of olive oil. When the pan is hot, add the mince and break it apart with a spoon. Cook for 5 minutes until golden. Add HALF the sauce and the green beans. Cook for 2 minutes, then add the broccoli and cook for another 2 minutes until the greens are bright green and cooked, but with a slight bite.

Serve the beef mince with the rice topped with the REST of the sauce, a drizzle of sesame oil, a sprinkle of lime zest and the bean sprouts.

Season with salt and pepper to taste.
