Recipe for Sausage Skillet with a veggie stir-fry
1/4 red onion – peel & chop finely
5g ginger – peel & chop finely
1 stick celery – slice thinly (½ cm)
1/4 bay leaf
1/4 tsp garam masala
100g cherry tomatoes – cut in half
25g Swiss chard – discard stalks, slice ribbons (1cm)
25g red spinach – discard stalks, slice ribbons (1cm)
2 beef bangers
butter (from your pantry)
salt & pepper (from your pantry)
olive oil (from your pantry)
Preparation: Prepare all ingredients as indicated above.
Beef bangers (sausages): Place a pan on medium-high heat with a drizzle of olive oil. When hot, add the bangers and cook for 10-12 minutes until golden and cooked through.
Veggies: Place a pan on medium-high heat with a drizzle of olive oil and a knob of butter. When the butter has melted, add the red onion, ginger, celery, bay leaf, garam masala and cherry tomatoes and sauté for 5 minutes until the tomatoes have softened. Add the Swiss chard and red spinach and wilt for 30 seconds. Season with salt and pepper.
Serve the beef bangers with the sautéed veggies on the side.
