Get dinner ready in ten minutes with this recipe for Salmon with Salad and crumbled feta cheese
160g salmon ribbons
80g salad leaves
2 tomatoes – slice
1 cucumber – dice (1cm)
1 red onion – slice finely
1/2 tsp mustard powder.
1/2 tsp xylitol
2 lemons – juice
4 tbsp olive oil for dressing (from your pantry)
salt & pepper (from your pantry)
Prepare all ingredients as indicated above.
Whisk together the mustard powder, salt, pepper, xylitol, olive oil and HALF the lemon juice in a mug/small bowl to make the dressing. Combine the salad leaves, tomatoes, cucumber and red onion in a salad bowl. Drizzle the dressing over the top and toss to coat.
To serve, divide the salmon ribbons between the plates and drizzle with a little of the remaining lemon juice. Add a serving of salad on the side and crumble feta over the top.
