Recipe for Ham ‘n Cheese Scones – with cream and chives
2 cups flour
6 tbls butter
3/4 tsp salt
3 tbls sugar
2 tsp finely ground black pepper
2 tbls baking powder
1/2 cup thick/double cream
1.5 cups grated extra sharp white cheddar cheese
5-6 slices honey smoked ham
I love scones. And these scones are substantial enough to be a lunch in itself. Just make the scones nice and big before you bake them.
Use cold butter and cut it into the flour using a pastry cutter or fancy kitchen mixer. The flour should now look like fine crumbs.
Add the salt, sugar, pepper, baking powder and chives and mix until evenly distributed. I would use a good handful of chives.
Lightly mix the eggs and the heavy cream. Make a well in the dry mixture and pour in the cream. Mix quickly and lightly until almost combined.
Chop up the sliced ham into small cubes and cheese, add this to the mixture.
Make triangle shaped scones and place on a baking tray with enough room so that they can puff up.
Bake for 22 minutes in a 400F/200 C oven.
Serve warm! Or store in an airtight container and microwave for 20 seconds before devouring. In the summer months, I suggest storing these in the fridge.
This goes really well with some fresh and crisp sliced apples.
