Recipe for Apple and Bran Muffins – healthy and delicious, with tons of fibre
2 cups bran/oat bran
1/2 cup sugar
2 1/2 cups flour
2 1/2 teaspoons bicarb
1 teaspoon salt
1/2 cup applesauce
2 cups buttermilk
2 eggs, beaten
2 tablespoons blackstrap molasses (available at healthshop and supermarkets)
1-2 large granny smith apples, skinned, cored and chopped (optional)
Mix dry ingredients in bowl. Add the applesauce, buttermilk, eggs and molasses; mix well. Gently mix in chopped apple.
Bake in greased muffin pan at 180 C for 15-17 minutes or until tests done with a toothpick.
