Pumpkin Pie Filled Cinnamon Cupcakes with Mascarpone Whipped Cream Frosting recipe

Recipe for super decadent cinnamon, pumpkin and mascarpone Cupcakes

1 2/3 cups all purpose flour
1 cup granulated sugar
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon baking soda
1 teaspoon baking powder
3/4 cup butter, room temperature
2 whole eggs + 2 egg yolks
2 teaspoons vanilla
1/2 cup sour cream
1/2 cup +1 tablespoon milk
Pumpkin Pie filling

Pumpkin pie filling
225g cream cheese
1/3 cup granulated sugar
1/2 cup pumpkin purée
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon all spice
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves

Mascarpone frosting
225g mascarpone cheese
1/4 cup granulated sugar
1/2 teaspoon cinnamon
1 teaspoon vanilla
2 cups heavy whipping cream

How to
Preheat oven to 350F/180C. Line two 12-cup muffin pans with 18 cupcake liners. (12 in one and 6 in the other.)

In the bowl of an electric stand mixer fitted with a paddle attachment, mix together flour, sugar, cinnamon, nutmeg, baking soda, and baking powder.

Add the butter, eggs and yolks, vanilla, sour cream, milk, and mix at medium speed until smooth.

Fill cupcake liners 1/2 full.

Pipe prepared pumpkin pie mixture into the center of each cupcake, about 1 tablespoon each trying to keep it toward the top.

Bake for 16 to 18 minutes or until the cake springs back when gently pressed and the center is set.

Let cool in pan for 5 minutes before transferring to a wire rack.

Cool cupcakes completely before frosting.

Pumpkin pie filling
In the bowl of an electric stand mixer, blend the cream cheese and sugar together until well combined.

Add pumpkin. Mix on medium speed until completely combined.

Add cinnamon, nutmeg, all spice, ginger, and cloves and mix thoroughly.

Mascarpone frosting
In the bowl of an electric stand mixer fitted with a whisk attachment, blend the mascarpone, sugar, cinnamon, and vanilla until a smooth paste is formed.

Add cream and mix on low until it is mostly incorporated into the cheese mixture.

Scrape bowl.

Whip on high speed until stiff peaks form.
