Nourishing and filling recipe for Peanut Butter Power Oats
1/2 cup oats
1 cup milk of your choice (I use rice milk or almond milk)
1/2 cup water
1 tsp vanilla extract
1 heaped Tbsp pea protein powder
1 Tbsp peanut butter
Add all of the ingredients except the peanut butter to a small saucepan and bring to a gentle simmer.
Cook with the lid on for 15-20 minute, stirring occasionally and adding in extra water if necessary, until the oats are creamy and have thickened.
Transfer to serving bowls, swirl through the peanut butter and serve with an extra dash of milk and toppings of your choice.
A handful of granola
Grated apple or sliced banana
A handful of frozen berries
Add in 1-2 tsp cacao powder during the cooking process for a chocolatey version and then serve with a drizzle of maple syrup
