Millionaire’s Shortbread recipe

This recipe for Millionaire’s Shortbread is wonderful for those with a sweet tooth

Ingredients

Biscuit layer:
250g butter
1/2 cup castor sugar
3 cups flour
2 t baking powder

Caramel layer:
130g butter
1/4 cup syrup
1 t vanilla essence
1 tin condensed milk
1/2 cup sugar

Chocolate layer:
240g chocolate

How to

To make the biscuit layer:
Preheat the oven to 160C.

Beat the butter and sugar together until creamy.

Sift in the dry ingredients.

Press the mixture into a greased tin and level with a rolling pin. Prick all over with a fork and bake until golden brown (Cooking time depends on your oven. Check every 15 minutes).

To make the caramel layer:
Melt the caramel ingredients in a pot over medium heat for 5 minutes, stirring continuously. Allow to cool and pour over the biscuit layer.

To make the chocolate layer:
Melt the chocolate over a double boiler and spread over the caramel. Leave to cool overnight before cutting.
