Milk Tart recipe

Traditional South African recipe for lekker Milk Tart, topped with cinnamon and nutmeg

Ingredients

Sweet shortcrust pastry:
1½ c (210 g) cake flour, sifted
¼ c (55 g) castor sugar
½ c (125 g) Mooi River butter, cubed
1 egg yolk
2 tbsp (30 ml) ice cold water

Filling:
4 cups (1 ℓ) Clover milk
3 tbsp (45 ml) Clover Springbok butter
2 cinnamon sticks
¾ cup (150 g) sugar
3 eggs
3 tbsp (45 ml) cake flour
3 tbsp (45 ml) cornflour

To serve:
1 tsp (5 ml) ground cinnamon
½ tsp (2.5 ml) ground nutmeg

How to
Sweet shortcrust pastry: Combine the cake flour and sugar in a mixing bowl.

Use your fingertips to rub the butter into the flour mixture until the mixture resembles fine breadcrumbs.

Add the egg yolk and cold water. Mix until the pastry just comes together. Shape into a round disc and cover in plastic wrap. Chill for at least 30 minutes.

Grease a 23 cm tart tin. Roll out the pastry with a 5 mm thickness and line the base and sides of the tin with pastry. Chill the pastry case for 20 minutes.

Preheat the oven to 200 °C. Place the pastry case onto a baking tray. Line the uncooked pastry case with baking paper and fill with baking beans. Bake for 8 to 10 minutes.

Remove the paper and beans and bake for a further 4 to 5 minutes, until golden.

Filling
Place the milk, butter and cinnamon sticks in a saucepan and slowly bring to a simmer.

Whisk the sugar and eggs until pale and creamy. Add the cake flour and cornflour and whisk until smooth.

Discard the cinnamon sticks and pour the hot milk mixture over the egg mixture. Stir well and return the mixture to the pan. Cook over gentle heat for 2 to 3 minutes or until the mixture has thickened.

Pour the mixture into the baked pastry case and allow to set for at least 2 hours. Combine the cinnamon and nutmeg and sift over the milk tart before serving.
