Super simple and quick recipe for Microwave Vanilla Fudge – the perfect quick fix for a sweet craving
1 x 385 g can condensed milk
500 g caster sugar
250 g butter
5 ml (1 t) vinegar
5 ml (1 t) vanilla extract / essence
Place the condensed milk, sugar and butter in a large and microwavable bowl. Do not stir or mix.
Microwave on high (100 % power) for 2 minutes.
Stir until all of the ingredients are well mixed using a wooden spoon.
Microwave on high (100 % power), stopping to stir the mixture at regular 2 minutes intervals, for about 12 minutes in total or until the fudge colour changes from pale to golden brown.
Take care during this process as the fudge will bubble and both the bowl and the mixture will be extremely hot.
Remove the bowl from the microwave and place on a heat resistant surface.
Stir in the vinegar and vanilla. Take care as the fudge will bubble up when the liquid is added.
Pour the fudge immediately into a dish that has been sprayed with non-stick spray.
Allow to cool for a few minutes until firm enough to cut but not yet set.
Portion the fudge into even sized squares.
Leave to cool and set completely.
