Low Carb Paleo Hot Cross Buns recipe

Recipe for gluten and sugar-free recipe for Hot Cross Buns

Ingredients
½ cup almond flour
30g psyllium husks
1 tsp. baking powder
2 tbsp. granulated stevia / xylitol / coconut sugar
½ tsp. salt
1 tsp. vanilla extract
½ tsp. mixed spice
½ tsp. cinnamon
½ tsp. ground cloves
4 eggs
1 cup boiling water
¼ cup raisins – coated in almond flour
¼ cup cacao nibs – coated in almond flour

Icing:
Stevia or erythritol icing mix
1 tsp vanilla extract
Enough water to make a smooth paste

How to
Preheat Oven to 180°C

Mix all the dry ingredients in a mixing bowl. Add the eggs and mix using a whisk. Add the boiling water and mix until evenly combined to form hot cross bun dough.

Roll dough into 8 equal balls and place on a baking tray. Oven bake at 180°C for 20-30 minutes until golden on the outside and cooked in the centre.

Prepare Icing:
Combine stevia icing mix with vanilla and water to form a smooth paste

Mark each hot cross bun with a cross using the stevia icing mix.

Serve hot and enjoy!
