Healthy Curried Chicken Salad recipe

Low calorie recipe for Curried Chicken Salad with almonds and grapes.

Ingredients
2 Cups Chopped Chicken (boiled, baked, fried or grilled)
1/8 Cup Dried Cranberries
1/4 Cup Chopped Almonds
1/4 Cup Chopped Celery
1/2 Cup Chopped Pineapple
1/2 Cup Chopped Green Grapes
2 Tablespoons Curry Sauce
1/3 Cup Plain Nonfat Plain Yogurt
Kosher Salt
Fresh Ground Black Pepper

Curry sauce:
1/2 Brown Onion (diced)
1/4 of a Large Lime (juiced)
1/2 Teaspoon Curry Powder
2 Tablespoons Coconut Milk
1 Tablespoon Olive Oil

How to
In a large bowl, add first 6 ingredients.

Add the curry sauce and yogurt to the bowl. Stir to thoroughly combine.

Add salt and pepper to taste and stir to combine.

Serve with crackers, lettuce leaves or bread.

Curry sauce:
Add 1 tablespoon of olive oil to saute pan and heat over medium high heat. Once oil is hot, add onions and saute until edges brown.

Pour onions and the rest of the curry sauce ingredients into a small food processor or into a blender. Process until smooth.
