Kofta Kebabs recipe

Recipe for Kofta Kebabs – Middle Eastern meatballs traditionally eaten with pita bread

Ingredients
450g ground beef (or lamb)
1/2 cup of plain bread crumbs
1/2 bunch of fresh coriander(cilantro), finely chopped
4 Garlic cloves, minced
1 smaller onion, finely chopped
juice of 1/2 lemon
1/2 tsp. ground cumin
1/2 tsp. paprika
1/2 tsp. curry powder
Pinch of each: cardamom, turmeric and cinnamon
1 tsp. tomato paste
1/2 teaspoon cayenne pepper or chopped chilies*optional
1 egg, bitten
Salt and black pepper to taste

How to
Once you are done chopping and mincing, combine all above ingredients together. If the mixture doesn’t combine well, add more bread crumbs.

The next step is to wet or oil your hands and start forming larg and thick patties. Just round these lightly to get the right shape.

Heat the non stick frying pan – I do not use any oil because oil will come out of the patties.

Cook them on each side for about 4 minutes, or until they are brown.

Serve in the flat or pita bread and any salad that you enjoy/

I serve mine with cold cucumber slices, shredded radishes with just bit of salt, steamed green beans with garlic slices drizzled with lemon juice (season with pinch of salt) and mashed potatoes.

This blend of spices works together very well and I wished that I had tried it before!
