Whip up this lunch or dinner recipe for Cheesy, Spicy Chicken & Mayo Subs with parsley butter
1/2 cup plain yogurt
1/2 cup mayonnaise
pinch smoked paprika
pinch garam masala
pinch chili flakes
2 cups shredded chicken from leftover roast
4 tablespoons soft butter
2 tablespoons parsley chopped fine
2 cups grated cheddar cheese
2 wheels feta to top
4 hot dog rolls or any bun of your choice
In a mixing bowl combine the yogurt and mayonnaise.
Add the spices and mix.
Now combine the creamy mayo with your shredded chicken.
Carefully hollow out four hot dog buns.
Fill the bread with chicken mayo mix.
Top with cheddar cheese.
Grill in the oven until bubbly and melted.
Meanwhile, combine the butter with the parsley and refrigerate until use.
When the subs are done grilling, sprinkle with crumbed feta and serve hot with parsley butter.
