Place 5 sheets of pastry in pan, butter thoroughly.

Top with 5 sheets of pastry, butter, nuts, layering as you go.
Put 5 more sheets of pastry and butter only. and then repeat the process again, this time using nuts mixture.
The top layer should be about 8 sheets deep.
Using a sharp knife cut into diamond or square shapes all the way to the bottom of the pan.
You may cut into 4 long rows to make diagonal cuts.
Bake for about 40 minutes or until baklava is golden and crisp.
Start making syrup before you start the baklava. It will give you enough time for the sauce to cool down. Or see comments section.
Boil sugar and water until sugar is melted. Add honey, lemon juice and lemon zest.
Simmer for about 20 minutes or until the syrup becomes thicker.
Remove baklava from oven and immediately spoon cold syrup over it.
