Cheesy Sub recipe with a Chicken filling, served with Butternut Chips on the side
4 sub rolls
500g chicken fillets
1 onion – peel & chop finely
1 sachet tomato paste
2 cloves garlic – peel, grate finely & chop
2 tomatoes – dice (1 cm)
80g bell pepper – dice (½ cm)
10g grated mozzarella
parsley – remove leaves & chop roughly
butter (from your pantry)
olive oil (from your pantry)
salt & pepper (from your pantry)
tin foil (from your pantry)
Preparation: Preheat the oven to 200°C. Prepare all ingredients as indicated above.
Butternut chips: 4 box: Cut the butternut lengthways into quarters. 2 box: Cut the butternut in half lengthways. Scrape the seeds out with a spoon and discard. Then slice the butternut crossways into very thin chips, about 2mm thick. On a tin foil lined tray, lay the butternut chips out in a single layer. Drizzle over a little olive oil and season with salt and pepper. Toss to coat. Roast in the oven for 20-25 minutes until golden and cooked.
Sub- rolls: Place the sub rolls in the oven and bake for 5 minutes until golden and crusty. Remove from the oven and set aside to cool down.
Chicken filling: Season the chicken fillets with salt and pepper. Place a large pan on medium-high heat with a knob of butter and a drizzle of olive oil. Add the chicken fillets and brown for 3 minutes until golden, but not cooked through yet. Remove from the pan and set aside. Add the onion to the pan with a knob of butter and cook with a little salt for 5 minutes. Add tomato paste and garlic, cook for 30 seconds then add the tomatoes and peppers and cook for 4-5 minutes. Add the chicken back in the pan and cook for 2 more minutes until the chicken is cooked through. Mix through the parsley.
Chicken sub: Cut the rolls in half lengthways, not cutting all the way through. Divide the chicken filling into portions and spoon a portion into the sub roll. Top with the grated mozzarella, then place the roll on a tin foil lined baking tray and cook in the oven for about 5 minutes until the cheese has melted. Remove from the oven and leave to cool down.
Serve the sub with the butternut chips on the side.
