Carrot Cake Bars recipe

Healthy, dairy-free recipe for Carrot Cake Bars

Ingredients
1 cup coconut flour
1 cup oat flour
65g vanilla protein powder
1/4 cup spelt flour
3 tbsp flax meal
1 1/2 tsp baking powder
1/4 tsp bicarbonate of soda
Pinch sea salt
1 tsp Cinnamon
1/4 cup granulated sweetener of choice
1/4 cup unsweetened applesauce
3/4 cup grated carrots
1/4 cup maple syrup or honey
1/2 cup almond butter (can sub for any nut or seed butter)
1/4 tsp vanilla extract
1/2 cup Almond Breeze Almond Milk
2 chia eggs (2 tbsp chia seeds, soaked in 5 tbsp water)
1/4 cup chopped nuts

How to
Mix all above together.

Press into baking tray.

Bake for 20-30min.

NB everyone’s ovens are different so monitor and check.

Cut into bars or blocks.

Top with toasted coconut.
