Recipe for super simple and seriously scrumptious Cappuccino Coconut Cookies
250g Snowflake cappuccino muffin Easymix
40g desiccated coconut
1 extra-large egg
80ml cooking oil
30ml cinnamon sugar for topping
Place Easymix in a mixing bowl. Lightly beat egg, oil and milk together. Add to the Easymix and coconut until just combined – do not over-mix.
Roll dough into heaped teaspoon sized balls and place onto greased baking trays, leaving enough space for spreading. Press down lightly with a fork. Sprinkle with cinnamon sugar.
Bake in a pre-heated oven at 180°C for 10-12 minutes. Turn out onto wire racks to cool. Store cookies in an airtight container.
For an even richer cookie: try adding chopped dark and white chocolate to the cookie mixture before baking.
