A quick and simple recipe for homemade Banana Bread – there’s nothing better!
2 cups flour, sifted
2 teaspoons baking powder
1 teaspoon salt
2 XL eggs
1 cup sugar
4 very ripe bananas
1 teaspoon vanilla
1/2 cup Sunfoil Pure Sunflower oil
Preheat the oven to 175°C.
In a medium bowl, combine the flour baking powder and salt.
In a large bowl, cream together the eggs and sugar. Stir in the mashed bananas, vanilla, Sunflower Pure Sunflower oil and cinnamon. Stir into the flour mixture, a little at a time, until just combined.
Pour the batter into a 22 cm x 12 cm loaf pan. Bake for about 1 hour or until a skewer inserted in the middle comes out clean.
