Baked Sausages recipe

Recipe for Baked Beef Sausages with delicious baked eggs served with a dollop of sour cream and chilli

Ingredients
2 beef bangers
1/4 onion – peel & chop finely
1/2 clove garlic – peel, grate finely & chop
1/8 tsp nutmeg
1/4 tsp mixed herbs
1/4 sachet tomato paste
1/2 tomato – dice (1cm)
1/4 cup passata
1/4 cup water (for the tomato sauce)
50g Swiss chard – remove stalks & slice (1cm)
1 egg (from your pantry)
1/4 fresh chilli (optional) – deseed & chop finely
1 tbsp sour cream
olive oil (from your pantry)
salt & pepper (from your pantry)
tin foil (from your pantry)

How to
Preparation: Prepare all ingredients as indicated above.

Beef bangers: Place a pan on medium-high heat with a drizzle of olive oil. When hot, add the bangers and brown for 3-5 minutes. Remove and set aside.

Tomato sauce: Using the same pan on medium-high heat, add a drizzle of olive oil. When hot, add the onion with a pinch of salt and cook for 5 minutes. Add garlic, nutmeg, mixed herbs and tomato paste and cook for 30 seconds. Then add the tomato, passata, water (see quantity above) and bangers. Cook for 6 minutes until the sauce thickens and the bangers are cooked through, then add the Swiss chard and wilt for 1 minute. Season with salt and pepper to taste.

Egg: Using a spoon, make a well for the egg in the tomato sauce mixture. Crack the egg into the well and season with salt and pepper to taste. Cover with a lid or tin foil and cook for 5 minutes until the white sets, but the yolk (yellow) is still runny.

Chilli: Place in a small bowl and cover with a few glugs of olive oil.

Serve the tomato sauce with the baked egg, topped with a dollop of sour cream and serve the chilli in olive oil on the side.
