Add your favorite preserve and this recipe for Banana, Peach and Almond Bread is an ideal breakfast snack.
2 cups (284g) of flour
2 ripe Bananas
1 soft Peach
Pinch of salt and baking soda (.5ml)
1/2 tsp. (2ml) baking powder
1/2 cup(99g.) of sugar
1 cup (237ml.) Coconut Milk
1/2 cup(118ml) of water/more if needed
2 tsp.(9g.) Coconut Oil
1/2 lb (225g) Almonds, ground in the food processor
Powdered sugar for garnish
Preheat oven to 190C
Combine the dry ingredients (flour, sugar, baking soda, baking powder, salt.)
Stir it and add banana and peeled peach.
Take a fork and mash as much as you can.
Pour in the milk and water.
Mix eggs and pour them in the batter.
Add Coconut oil and ground Almonds.
Stir everything very well, and pour in a loaf baking pan that you have previously oiled.
Bake for next 40 minutes, or until the loaf is golden brown.
Take it out, wait for 10 minutes and sprinkle little bit of Powdered Sugar.
Serve with cold milk, tea or coffee, and jam, nutella or butter.
